Our Story

Cooked in a converted cowshed, overlooking Silent Pool

What began as supper clubs in the Surrey Hills is now a kitchen sending proper Indian home cooking across the UK. We cook in small batches, with whole spices we grind ourselves and recipes handed down through generations.

Our chicken comes from family recipes rather than a spec sheet: a Delhi butter chicken, Mandira's mother's cashew and coriander murgh from Calcutta, a Goan xacuti built on dry-roasted coconut, and a dum-cooked biriyani.

Handmade Indian starters and chutneys, made in the Surrey Hills

Our starters and chutneys are two ranges that belong together. The starters are samosas, pakoras, patties, kebabs and corn rolls, shaped by hand and cooked in the oven or an air fryer rather than the microwave. The chutneys are small-batch preserves made from Mandira's mother's recipes, and they are what the starters are meant to be dipped into.

We fry and fold everything above Silent Pool, grinding whole spices every morning and using no artificial preservatives. Most of the starters are vegan, one is lamb, and the chutneys run from the sweet and sour Tamarind to the sharper Pineapple. Two of them hold Great Taste Awards.

Good to Know

Questions about our starters and chutneys

Which of your starters is the mildest?

Lamb Samosas and Spinach and Onion Pakoras are both mild, with warmth from the spices but no chilli heat. The Pizza Samosas are mild too and they are the ones children usually go for.

Which starters are vegan?

Vegetable Samosas, Spinach and Onion Pakoras, Pea Patties, Hara Bhara Kebabs, Kaju Corn Rolls and Spiced Crackers are all vegan. Lamb Samosas are not, and Pizza Samosas are vegetarian rather than vegan.

Are your onion bhajis made with wheat flour?

No. The Spinach and Onion Pakoras are made with gram flour, which is ground chickpea, so there are no gluten ingredients in the recipe. We cook in a kitchen that also handles wheat, so we cannot promise there are no traces.

How long do the starters take to cook from frozen?

About twenty minutes in the oven at 180C, or twelve to fifteen in an air fryer at the same temperature, turning once. No defrosting needed. Avoid the microwave, because the pastry and batter go soft.

Can I cook samosas in an air fryer?

Yes, and it is the best way. Twelve to fifteen minutes at 180C from frozen, turning once halfway through. They come out crisper than they do from the oven.

How many does a pack of starters feed?

Each pack serves two as a starter, or four to six as something to pick at with a drink. The twelve-piece Vegetable and Lamb samosa pack is the one for a crowd.

Which chutney goes with which starter?

Tamarind Chutney beside the samosas, because it is sweet and sour and cuts through the pastry. Tomato and Date with the crackers and on a cheeseboard. Pineapple Chutney when you want something sharp enough to stand up to a rich curry.

Have any of your chutneys won awards?

Yes. The Tamarind Chutney, the Pineapple Chutney and the Tomato and Date Chutney are all Great Taste Award winners, and so are the Kaju Corn Rolls and Hara Bhara Kebabs.

How long do the chutneys keep once opened?

Keep the jar in the fridge and use it within a month. Unopened, go by the date on the label. The chutneys are cupboard stock, so they do not need the freezer.

Are your starters suitable for children?

Pizza Samosas and Lamb Samosas are the two most children eat happily, both mild. Check the Kaju Corn Rolls first, because they contain cashew nuts.

Where are your starters and chutneys made?

All of them are made by hand in small batches at our kitchen in a converted barn above Silent Pool, near Albury in the Surrey Hills, and delivered across mainland UK.
