This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Onion Bhajis with a Crisp Edge and a Soft, Spiced Middle

Our onion bhajis are handmade from sliced onion and spinach, bound in gram and wheat flour and lightly spiced. You get the crisp, craggy edges of a proper bhaji and a soft centre, without the greasy golf-ball a takeaway sometimes hands you. They are vegan, so they suit most of the table. We cook them in small batches at our Silent Pool kitchen and blast-freeze them the same day.

VEGAN
No dairy, no egg. The batter is gram (chickpea) and wheat flour. We cook in a kitchen that also handles gluten, nuts and dairy, so we can't promise against traces. Check the label if you have a serious allergy.

HOW TO COOK ONION BHAJIS FROM FROZEN
Oven or air fryer, straight from frozen, for 8 to 12 minutes until crisp and hot. Skip the microwave or you lose the crunch that makes a bhaji worth eating.

HOW SPICY ARE THEY?
Mild and family-friendly. There is flavour and warmth from the spices, not heat. Serve with tamarind chutney to dip, or green chilli chutney if you like a kick.
