Cooked in a barn above Silent Pool

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Lamb Samosas, The Classic Meat Samosa Done Properly

Our lamb samosas are hand-rolled parcels of seasoned minced lamb in crisp pastry, six to a box. This is the classic meat samosa, spiced the home way and folded by hand overlooking Silent Pool. Good enough to be the reason people come back.

SPICE AND WHAT IS IN THEM
A gentle, savoury warmth rather than fierce heat. Minced lamb, onion and Indian spices in wheat (gluten) pastry. We cook in a kitchen that also handles nuts and dairy, so ring us if you have a serious allergy.

HOW TO COOK THEM
Straight from the freezer, oven or air fryer for eight to twelve minutes until crisp. Skip the microwave or you lose the crunch.

WHAT TO SERVE WITH THEM
Tamarind chutney to dip, a squeeze of lemon, and a cold drink. Lamb samosas are a fine starter and even better party food.
