Serving Suggestions
Remove the outer sleeve, then heat from frozen in the microwave, oven or on the hob for the time on the pack. Shake or stir halfway through, then cut open, make sure it's piping hot all the way through, and serve. They can be heated from frozen. If defrosted, keep in the fridge and use within 48 hours.

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Palak Dal, Our Spinach Dal for Easy, Good Eating

Palak dal is a spinach dal built for everyday. We cook soft yellow lentils down with tomato, garlic and ginger, then stir through plenty of fresh spinach so it stays green and light. It is the kind of spinach dal you go back to on a Tuesday, gentle and nourishing, made by hand in our converted cowshed in the Surrey Hills.

HOW SPICY IS IT
Mild. There is warmth from the spices, not heat, so this spinach dal works for children and anyone easing in.

WHAT IS IN IT
Yellow lentils, fresh spinach, tomato, garlic, ginger and freshly ground spices. It is suitable for vegans. We cook in a kitchen that also handles gluten, nuts and dairy, so ring us if you have a serious allergy.

HOW TO HEAT IT
Straight from the freezer, four to five minutes in the microwave or eight on the hob, stirring halfway until piping hot.

WHAT TO SERVE WITH IT
Rice or a naan and a squeeze of lemon. Palak dal is light enough to sit beside a heavier curry, or to be the whole quiet, good dinner on its own.
