Description

Crisp, hand-rolled pastry around spiced minced lamb, and the first thing to vanish at any party. A samosa is simply a savoury pastry parcel, made for dipping, and these are the ones the meat eaters make a beeline for. We freeze them raw so they crisp up properly from frozen in the oven or air fryer, never soft and never greasy. Always a chutney to dip, tamarind for choice, and they will not last long.

Cooked in a barn above Silent Pool

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Before your first order

How is it delivered frozen?

Frozen, in an insulated wool-lined box, dispatched Tuesday to Friday across mainland UK. It arrives frozen and goes straight into your freezer. Collection from the barn is available seven days a week.

How do I cook it?

Oven or air fryer, 8 to 12 minutes from frozen. The microwave will heat them but it will also soften the pastry, which rather defeats the point.

How spicy is "Medium"?

Medium, so it has got a slight kick. Raita made with our Mint and Magic mix takes the edge off, green chilli chutney takes it up. That is why we suggest serving both.

How many does it serve?
