Our barn, our recipes

Cooked in a barn above Silent Pool

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Lehsuni Dal, Our Garlic Dal for Proper Garlic Lovers

Lehsuni means garlic, and this garlic dal does not hold back. We cook soft yellow lentils down with slow-sweetened garlic, tomato and a little asafoetida until it turns comforting and mellow, the sort of thing you eat with a spoon straight from the bowl. It is a garlic dal made the home way, by hand, overlooking Silent Pool. Vegan, gentle and quietly addictive.

HOW SPICY IS IT
Mild. The garlic does the talking, not chilli, so this garlic dal is easy company for children and anyone who likes flavour over fire.

WHAT IS IN IT
Yellow lentils, plenty of garlic, tomato, onion, asafoetida and freshly ground spices. It is suitable for vegans. We cook in a kitchen that also handles gluten, nuts and dairy, so ring us if you have a serious allergy.

HOW TO HEAT IT
Straight from the freezer, four to five minutes in the microwave or eight on the hob, stirring halfway until piping hot.

WHAT TO SERVE WITH IT
Rice or a naan and a squeeze of lemon, and not much else. A garlic dal like this is happiest as the quiet hero of the plate, though it will gladly sit beside a meat curry for a bigger spread.

WHY BUY OUR LEHSUNI DAL
It comes from the same award-winning kitchen as the rest of our range, made in small batches and delivered across the UK. If you love garlic, this garlic dal is the one to keep in for an easy, honest dinner. Order yours today.
