Chicken Biryani, Layered and Steamed the Dum Way

Our chicken biryani (we spell it biriyani, the Calcutta way) is basmati rice and boneless chicken cooked together in a sealed pot, so the rice steams in the spices and takes up every bit of flavour. This is dum biryani, not rice with a curry stirred through it. Saffron, whole spices and slow-cooked chicken give you a biryani with distinct, separate grains and real depth. We make it in small batches at our Silent Pool kitchen and blast-freeze it fresh.

HOW SPICY IS IT?
Medium and family-friendly. There is warmth and fragrance from the spices, with a gentle kick rather than a fierce one. For more heat, serve a green chilli chutney on the side.
