We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Keema Mattar, Our Great Taste Winning Lamb Mince Curry

Keema matar is minced lamb cooked down with green peas, and this is our Great Taste winning take on it. The lamb mince is browned and simmered with onion, tomato, ginger, garlic and garam masala until the sauce turns rich and clings to every grain. Spelt keema mattar or keema matar, it is one of the most useful dishes to keep in the freezer, and it serves 2. This lamb mince curry earns its place at the table.

HOW SPICY IS IT?
Medium. Garam masala carries most of the flavour, with a gentle chilli warmth underneath. It is comfortable for most palates. Stir through a little yoghurt or add fresh green chilli depending on which way you want to take it.
