The most used spice blend in my own larder, this is a personal favourite and is made using red chillis, fenugreek and a other spices used to make Indian pickles. Add a sprinkle of this onto everything from cheese toast, macaroni cheese, savoury scones and biscuits, roast poatoes, fries , eggs and curries and see the magic happen.

Our barn, our recipes

Cooked in a barn above Silent Pool

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.
