This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Vegetable Biryani, Layered and Steamed the Dum Way

Our vegetable biryani (we spell it biriyani, the Calcutta way) is basmati and spiced vegetables cooked together in a sealed pot, so the rice steams in the spices and takes up every bit of the flavour. Cauliflower, carrots and peas, saffron, whole spices and separate, fragrant grains. This is dum-cooked veg biryani, not rice with vegetables stirred through, and it happens to be vegan. Made by hand overlooking Silent Pool.

HOW SPICY IS IT
Mild and fragrant, gentle enough for children, with warmth from the spices rather than chilli.

WHAT IS IN IT
Basmati rice, cauliflower, carrots, peas, onion, saffron and freshly ground whole spices. It is suitable for vegans. We cook in a kitchen that also handles gluten, nuts and dairy, so ring us if you have a serious allergy.

HOW TO HEAT IT
Straight from the freezer, four to five minutes in the microwave or thirty in the oven. Fork it through before serving so the grains separate.

WHAT TO SERVE WITH IT
A raita to cool it and a naan alongside, though this veg biryani is a full meal for two on its own. Add a dal and you have a spread.
