Railway Lamb Curry began in the dining cars of first-class railway travel, when British and Indian tastes met over a slow, warming meal. Ours uses spring lamb on the bone, cooked long and gentle in mustard oil with Kashmiri chilli, black cardamom and mace. This railway lamb curry has a deep, savoury sauce that clings to the bone, the way a proper slow cooked lamb curry should. It serves 2 to 3.

HOW SPICY IS IT?
Medium. Kashmiri chilli brings colour and a mellow warmth rather than sharp heat, balanced by the smoky black cardamom and mace. Most people find the level comfortable. A spoon of yoghurt on the side rounds it off if you prefer things softer.
