Remove the outer sleeve, then heat from frozen in the microwave, oven or on the hob for the time on the pack. This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Kingfisher Watercress Dal, Our Most Local Dinner

This might be the most local dal in Britain. We take peppery watercress from Kingfisher Farm, a few miles from our kitchen near Albury, and fold it through soft yellow lentils with sweet garlic and slow-cooked tomato. The watercress keeps its bite and its colour, so you get greens and comfort in the same bowl. A watercress dal you will not find anywhere else, made by hand in the Surrey Hills.

Mild and gentle, built on flavour rather than heat, so it suits the whole table.
