Our barn, our recipes

Cooked in a barn above Silent Pool

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Before your first order

How is it delivered frozen?
Frozen, in an insulated wool-lined box, dispatched Tuesday to Friday across mainland UK. It arrives frozen and goes straight into your freezer. Collection from the barn is available seven days a week.
How do I cook it?
Remove from the packaging and sprinkle over a few drops of water. Heat from frozen: 30 seconds in the microwave, or a few minutes in the oven, on a dry pan, or in the air fryer. Fold in a cloth to keep warm and ready. Finish with a little butter, a sprinkle of ghee, or our Firecracker masala.
How many does it serve?
Perfect for two very hungry people, with a little left over for the next day, or it will happily feed three.
