Description

Kingfisher Farm is a few minutes from our kitchen, and their watercress goes into this dal the same week it is cut. Peppery green against four soft lentils, slow tomato and sweet garlic. It is as local as a curry gets in this country, and it tastes of both places at once. Rice or naan, and a good appetite.

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.
