This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Some nights you want to do a little of the cooking yourself. Our tarka dal kit gives you everything for six generous portions of comforting yellow-lentil tarka dal: the lentils, our spice blend and dried herbs, ready for you to add water and a knob of butter at home. Ten minutes on the hob and the tarka, that sizzle of spices in hot butter, fills the kitchen. If I can cook, anybody can cook.
