Cooked in a barn above Silent Pool

This gravy starts the way it did in Mandira's family kitchen in Calcutta: whole spices, toasted and ground the same morning, cream stirred in slowly so it never splits.

We cook in small batches in a 400-year-old barn in the Surrey Hills, then blast-freeze every pot the day it's made. Cooked, then frozen. That order is the whole point.

Vegetable Samosas, Hand-Rolled with Potato and Pea

Our vegetable samosas are the real thing: crisp, hand-folded pastry packed with spiced potato and pea, made by hand in the Surrey Hills. Six to a box, and vegetarian. The kind of starter that never lasts as long as you plan.

SPICE AND WHAT IS IN THEM
Gently spiced, no real heat, so they suit the whole table. Pastry made with wheat (gluten), filled with potato, peas and Indian spices. We cook in a kitchen that also handles nuts and dairy, so ring us if you have a serious allergy.

HOW TO COOK THEM
Straight from the freezer, oven or air fryer for eight to twelve minutes until golden. Skip the microwave, they turn soft.

WHAT TO SERVE WITH THEM
Tamarind or mint chutney to dip. Vegetable samosas open a curry night, sit on a sharing table, or make a quick lunch with salad.
