He's currently in Calcutta, probably eating better than I am, arguing with somebody confidently, and asking whether the fish is fresh enough.
So I thought I'd send out one of his favourite curries. Gondhoraj Chicken Malai Curry (from 1-30 June).
The malai curry came through old Malay trade routes, when coconut milk found its way into Bengali cooking. Traditionally it was often made with prawns, but in our house my mum makes it with chicken, with gondhoraj lemon leaves, from the king of limes itself.
It's gentle, citrusy, and very much the sort of thing my father likes to eat while commenting on absolutely everything else around him.
So this one's for the dads. The father figures. The men who taught us resilience, storytelling, stubbornness and occasionally very questionable parking.
This June, the curry is on me.
