It’s nearly a year since we started the #coronadiaries on Facebook – Mandira has faithfully commented every day about memories, recipes or just a diary update.  (We thought that lockdown wouldn’t last longer than Mandira’s ramblings…but here we are nearly a year later)….see below for the latest….
It was only when I was a proper grown up did realisation dawn that the version of French Toast we grew up on was nothing like the vanilla infused, cinnamon flavoured, sugar dusted creations that the western world is accustomed to.
Our version of Anda (egg) Bread has finely chopped red onions flavoured with green chillis ( or red chilli powder) and chopped fresh coriander leaves all ( if you have any) mixed into well beaten eggs. White bread is then soaked into this savoury, well seasoned egg bath – soaking up the flavours before being shallow fried and served with tomato sauce.

And speaking of cheats hacks, my cookalong session tomorrow features some great dishes like stuffed aubergine and a cabbage and coconut salad using either leftovers or some of our ready meals.. list of ingredients can be found here:
