Chicken Rezala


This delicate curry originates from the royal kitchen of Lucknow before becoming a speciality of its adopted home in the city of Calcutta where it is still  enjoyed in many a home and eating house. Made only with whole spices, flavoured with mace and nutmeg, the pale gravy gets it nutty aroma from ground poppy seeds and kewra (screw pine) water. Serves 2.
